Next, we delight you with the recipe for rice with "galera", monkfish, and prawns, which will be served during these "Jornades de la Galera de Terres" in the Ebre at the Restaurant Les Veles in L’Ametlla de Mar.

##INGREDIENTS FOR 4 PEOPLE

  • Rice 400grs.
  • 1/2 red pepper.
  • 1/2 green pepper.
  • 1 onion.
  • 2 liters of broth fish.
  • 240 grams of clean monkfish tails.
  • 12 prawns.
  • 60 grams of olive oil.
  • Salt to taste.

PREPARATION

  • Cut the onion, the red pepper and the green pepper in "brunoise".
  • In a pan with a little bit of oil, sear the diced monkfish, the whole prawns and the whole "galeres" over a high heat.
  • Withdraw and reserve.
  • Sauté the vegetables over medium heat so that they caramelize a little bit with the olive oil.
  • Once fried, add the rice and seal it over low heat together with the mark of the vegetables.
  • Boil the fish broth. When it has reached the boil, add it to the rice and cook it over high heat for 10 minutes.
  • Then we lower the heat to medium heat and finish cooking for another 5 minutes.
  • Add salt to taste.
  • We add the monkfish, the prawns and the "galeres" and just cook it in the oven at 220º for another 5 minutes.
  • Remove the rice from the oven and let it rest for 3 or 4 minutes before serving.
