Rice, spinach, beans, and “galeres”

Ingredients for 4 people for rice, spinach, beans, and “galeres”:

  • 8 “galeres”.
  • 400 g rice.
  • 150 g cooked beans.
  • 150 g spinach.
  • 1 onion.
  • 1 leek.
  • ½ red pepper.
  • 2 garlic cloves.
  • 1 tomato.
  • 1 sprig of parsley.
  • 1 teaspoon of paprika.
  • ½ small glass of white wine.
  • 1 liter of water.
  • 100 g olive oil.
  • Salt to taste.

First, fry the “galeres”. Once cooked, remove them to a plate and use the remaining oil to saute the onion, pepper, and leek. When browned, add the raw spinach. While everything is frying, make a paste with the garlic, parsley, tomato, paprika, and salt. Add the paste to the saute and pour in the half glass of white wine. Once the wine has reduced, add the liter of water and let it boil for about five minutes. After these five minutes, add the rice and beans and let it cook for 13 minutes. Five minutes before finishing, add the chopped “galeres”.
