MARINATED TUNA SHELL, CUCUMBER AND AVOCADO “TZATZIKI”

For the elaboration of the marinated tuna shell "Tzatziki" of cucumber and avocado that you can find in the Restaurant Golpe de Estado” of L’Ametlla de Mar, you will use:

INGREDIENTS:

  • Glass bread coke.
  • 200grs of fresh tuna.
  • 1 lemon.
  • 1 orange.
  • 100ml of olive oil.

FOR THE CUCUMBER AND AVOCADO “TAZTZIKI”:

  • ½ cucumber cut into “bronoise”.
  • ½ avocado cut into “bronoise”.
  • Juice of ½ lemon.
  • 5 g of coriander.
  • 5 g of chives.
  • 5 g of parsley.
  • Salt and pepper to taste.
  • Olive oil for seasoning.
  • 1 natural yogurt.
  • Dehydrated black olive.
  • Sprouts or "micro mix".

First of all, marinate the tuna with orange juice, lemon and 100 ml of olive oil for about two hours.

Meanwhile, we will toast the glass bread in the oven for about 14 minutes at 165 degrees.

ASSEMBLY:

On top of the crusty bread, we will add the cucumber and avocado "tzatziki" mixture. On top we will add the marinated tuna in the shape of waves or flowers and on top we will add the sprouts. Finally, we will decorate it with the dehydrated olive.
